I know the thought of making a salad dressing from scratch might seem daunting but know, you got this! A good friend of mine told me recently that she doesn’t have time to make a dressing. But friends, I promise you do! All it takes is a blender and five minutes of your time and boom you have a homemade dressing for the whole week. You will have saved some major money by making your own and will have the pride and knowledge of a new skill. You can do this!
Homemade Dairy Free Creamy Tomatillo Cafe Rio Dressing
If you were born in the last century and live in Utah then you know what I'm talking about…and as much as I don't like to have a "last meal" before I dive into a Whole30 I DO always seem to make sure to enjoy one last Cafe Rio Salad, and really… I'm in it for the dressing…
I remembered my favorite dressing I make in the summer, my Basil Ranch dressing that is Whole30 compliant. So there must be away to make an imposture Creamy Tomatillo Dressing right? Well baby we did it and Chris and I have been using it for everything! Dip? Sure! Dressing? Sure!
- 1 cup Primal Ranch
- 1/2 cup Primal Mayo
- 3 tomatillos
- 2 cloves garlic
- 1 lime (juiced)
- 1 bunch cilantro (see nots below )
- 1 jalapino (leave seeds in for more spice, omit seeds for a mild flavor. )
- 1 salt (to taste)
Measure out all ingredients, add to a food processor. BLEND, and there you have it folks!
- I like… wait no. I LOVE cilantro. If you are not as enthused about it as I am you may want to cut your amount of cilantro in half.Â
