This salad is a much welcomed change of pace, in the middle of winter most of our food seems so heavy. This salad is refreshing, the tahini gives it that warm earthy taste we crave in the winter months while the mint and shrimp keep it light.
A year ago I was visiting my grandparents in San Diego. They live in downtown SD, below their condo is this wonderful “new” restaurant, Anime. Everything, and I’m not joking EVERYTHING was amazing! But my favorite small plate was a cucumber salad with this beautiful tahini sauce… well, I could go on all day, so if you’re ever downtown SD you must stop.
Here is my spin on that fabulos dish.
Creamy Tahini Lime Shrimp Salad

- cooked shrimp
- Creamy Tahini Lime Dressing
- sliced cucumbers
- shredded mint (I like about 2 tbsp )
- lettuce
- sesame seeds
Assemble ingredients in the quantity and order you like; in a bowl, plate or Jar. ENJOY.
I mean it’s that easy! We love the tahini dressing on everything but this salad might be our favorite so far. It’s so simple yet bold. Enjoy my friends!
