Grilled Peach and Kale Salad with Truffle Vinaigrette

Jar Salad: I make these Sunday and enjoy them thought the week. They are a great grab and go option.

This salad is a show stopper. It has so many bold flavors to it that each bite has you going back for more. This salad was inspired by the Defined dish Bibb Salad with Black Truffle dressing it is such a great summer salad. This is my end of summer fall take on it.


For the salad:

  • Kale
  • Cherry Tomatos
  • Peach grilled or fresh
  • Red Truckle cheese
  • Rotisserie Chicken
  • Candied Pecans

For the Dressing:

  • 1/2 Cup truffle infused olive oil
  • 1/4 cup white wine vinegar
  • 2 TBS Dijon Mustard
  • 1 clove garlic
  • Salt and pepper to taste


Assemble your salad with your salad. If making meal prepping for a jar salad tomatoes and peach at the bottom, Chicken and cheese in the middle, kale on top. Keep the pecans and dressing separate so they stay fresh. For the dressing put all ingredients into a mason jar and shake well. Keep in the refrigerator up to a week.
