    Grilled Serrano Chicken

    This flavor packed chicken is perfect for a backyard BBQ. By marinating the chicken the day before, you will be taking one thing of your plate the day of. The cook time for this recipe is also great for your big day. You can have that cool grill master moment, where your guests see you with apron on and tongs in hand. But your chicken will cook in 10 minutes leaving the only thing for you to do after… grab a beverage and start enjoying the awesome get together you worked to put together.

    Grilled Serrano Chicken

    SO. MUCH. FLAVOR. Thats all you need to know. Ok..let tell you a bit more about this. I have been making this for quite sometime I originally I made this with canola oil, sugar and soy sauce. Don't get me wrong it was amazing but in a world where we know so much about the heath effects of those three ingredients I am pleased as punch to have a cleaned up recipe that I can share with you today. Happy Grilling!

    • 10 cloves garlic
    • 2" fresh ginger (peeled )
    • 1 cup olive oil (extra for brushing your grill )
    • 1/4 cup apple cider vinegar
    • 3 tbsp fish sauce (this gives it umami )
    • 1 tbsp kosher salt
    • 3 serrano peppers (sliced )
    • 8 chicken breasts
    1. In a blender blend; garlic, ginger, olive oil, apple cider vinegar, fish sauce, and salt. Pour into a ziplock bag or into a bowl for marinating. (At this point I take a cup out and add it to a small bowl for Jude this way his is not too spicy)

    2. Add serrano peppers to your mixture. Depending on how spicy you like it you can decide to leave in the seeds or omit them.

    3. Add chicken breasts and let marinate in the refrigerator for 24 hours

    4. When ready to grill; heat your grill, CAREFULLY brush your grill with olive oil, lay chicken breast on the grill and cook about 4 minutes per side. Check internal temp of chicken. Chicken is cooked at 165 degrees.

    • Not feeding 8 people? No problem, simply halve the ingredients.
