Tonight we are having meatballs. My husband and son LOVE them. I have been making these bad boys for the past few years and they are always a crowd pleaser! I have modified it to be gluten free. Back in the day I use to make it with Jimmy Dean Sausage that you can find in the refrigerator section but because my family tries to avoid added sugars when we can I now buy ground pork at our local market and season it myself. But if you are thinking “Kait no one has time for that I just want to throw a meal on the table before my kids claw their way up my leg!” Then please stick to the Jimmy Dean leave out the seasonings and BAM you have yourself a six ingredient meal! These also have raisins in them, I know what???? but trust me they are so so yummy. You know that sweet and salty we all like, well, can’t meatballs share that same experience too? The golden raisins (DO NOT TRY regular I made that mistake for you, they don’t taste the same I promise!) will caramelize and make these classic flavors POP! So ring the dinner bell and enjoy!
2 LB ground pork
1TBS freshly chopped rosemary
2 TBS of chopped shallots
4 tsp salt
1 cup golden raisins
2 LB ground beef
2 5 oz jars of tomato sauce (I like Cucina Antica because its sugar free)
Olive oil for frying
- Season and mix the ground pork with, rosemary, oregano, shallot, and salt. Add the golden raisins, eggs, and ground beef mix together.
- Roll into golf ball sized meatballs and set on a tray.
- In a pan add Olive Oil for frying brown on all sides. Transfer to dutch oven and add tomato sauce and water. Heat on medium high until sauce comes to a boil, immediately turn to low and simmer for 45 min. ENJOY!
