    Morning Buzz Chocolate Chip Cookies

    Morning Buzz Chocolate Chip cookies are chewy, gooey, and everything you want in a chocolate chip cookie. But WAIT, there’s more! These sweet things have a buzz to them. Just a hint of coffee grounds and I promise you will feel a tiny kick of caffeine (don’t be afraid!).

    I bet most of you have these ingredients in your house right now. That’s the best part about these cookies. When the two o’clock sugar craving comes a-knocking here’s what I suggest. Don’t eat packaged cookies, make your own! I can hear some of you “ugh I don’t have time for that”, but I promise you you do! They are not THAT time-consuming (ok sure maybe they do take a bit longer than ripping open that package of cookies). But the pride you feel when your house smells like fresh baked cookies, that you made by hand is worth the extra few minutes it takes.

    The star of the show COFFEE GROUNDS! Ok so here’s the deal, you can use any coffee grounds but I enjoy Morning Buzz from Whole Foods because they are a pretty neutral-flavored coffee. They don’t have that floral taste that you might get from your boutique coffees but they are higher quality and can withstand high heat. You can also use decaf… 

    Cake Four 

    If you want to take this recipe one step further and I must say you would be making an excellent choice if you accept this challenge. Here in Utah, there seem to be several cookie shops that are popping up all over the place. I have a sneaking suspicion that these cookie shops are using a mixture of all-purpose and cake flour. See notes for the ratio that I use for this specific recipe. Cake flour will give you a bit more density and a more chewy texture.

    Salt

    I may have gone too far with using different types of salt in my cookies and I’m ok with that. For most of my cookie recipes, I use fleur de sel. It holds its structure providing you with a random pop of salt crystals giving you that salty-sweet that I happen to love. 

    Chocolate Chips

    Using different sizes and varieties of chocolate chips will take your cookies to the next level! They will look like they are from a bakery because of the different color and size variations, this will also give them a greater depth of flavor. I use 50% large milk chocolate chips and 50% mini semi-sweet.

    Morning Buzz Chocolate Chip Cookies

    These cookies are the perfect mom-only cookies. They are chewy, spiked with coffee grounds giving you that afternoon pick me up, AND best of all they freeze perfectly so you can pop one in the oven while you put your little one down for a nap and have a hot gooey cookie.

    Ingredients

    Scale

    8 tablespoons softened butter

    1 tablespoon brown sugar

    3/4 cup granulated sugar

    1 egg

    2 teaspoons vanilla extract 

    1 &1/3 cup all-purpose flour (see notes)

    1 teaspoon salt

    1/2 teaspoon baking soda

    1 teaspoon coffee grounds  

    1 cup chocolate chip cookies

    Instructions

    1. Pre-heat oven to 325 
    2. In a standard mixer fitted with a paddle attachment cream butter and sugars on high for 2 minutes, scrape down the bowl. Slowly add egg and vanilla until incorporated.
    3. In a separate bowl mix together flour, salt, and baking soda. Slowly add to wet ingredients, scrape down the bowl one last time. 
    4. Add chocolate chips and coffee grounds. 
    5. Using a 2″ scoop, scoop dough into rounds. Freeze for up to a month and bake-off one at a time OR place on a cookie tray and bake for 15-20 minutes.

    Notes

    If you want to take your cookies to the next level use a mixture of AP flour and cake flour. Trust me… DO IT. For this recipe, I would do 1 cup of all-purpose flour and 1/3 cup cake flour.
