You heard me two ingredients. One banana two eggs that’s all folks. Jude wakes up some mornings with pancakes on the brain and when that happens pancakes it is… well sort of. These pancakes are so close to being “real” it’s uncanny. We serve these with smashed raspberries or blueberries.
Two Ingredient Banana Pancakes

These are perfect for my dear gluten-free, low inflammation, keto, paleo, dairy-free friends out there! Last year I made these for Jude on Valentines' day morning, I smashed up raspberries in place of syrup and cut the pancakes into little hearts.
- 1 banana
- 2 eggs
- fat for frying (I use butter or cocnut oil)
In a blender mix banana and eggs. Heat a pan and melt butter or coconut oil pour the pancake mixture in and cook on medium-high heat until able to flip successfully.Â
